During the warmer months, poor storage or preparation of certain foods can significantly increase the risk of food poisoning. 

High temperatures accelerate the decomposition of many products, favoring the growth of bacteria such as Salmonella, E. coli, and Listeria. Here we explain which foods you should avoid or handle carefully during this season.

1. Raw or undercooked meats: a latent risk
Chicken, fish, and beef that are not fully cooked represent a particular danger during the summer. 

Studies show that heat promotes the growth of microorganisms that can cause serious food poisoning. Specialties such as carpaccio, tartar, and sushi are especially dangerous if they haven’t been properly refrigerated.

Tip: Cook meats thoroughly and keep them refrigerated until ready to eat. If you choose raw preparations, be sure to follow strict storage protocols.

2. Desserts with cream, mayonnaise, or raw egg.
Delicacies like tiramisu, mousses, and filled cakes can become breeding grounds for bacteria if not stored under optimal conditions. These products should not remain at room temperature for more than two hours.
